Ooh baby, this is SO good! If you love cilantro, lime, and chicken, this Grilled Cilantro Lime chicken is for you. It’s so easy to make and tastes so fresh.

I know that some people just love cilantro while others not so much. I’ve heard that some people think it tastes like soap. I’m in the group that loves it! I can see how they think it tastes like soap but a good soap. (haha)

My family eats a lot of grilled foods. We have a gas grill so it’s really convenient to just turn it on and cook. Our grill can be charcoal, too, and that’s always a treat. I think everything tastes better grilled. 🙂

When I make this recipe, I usually put it together in the morning so it can let it marinate all day and be ready for dinner. The marinade really penetrates the chicken, and you can taste the flavor throughout.

Here’s how to make it.

Step one:

Prep! Gather and measure all ingredients.

Step two:

In a bowl, combine the olive oil, cilantro, lime juice, lime zest, garlic, chili powder, cumin, salt and pepper. Whisk together until thoroughly combined.

Step three:

In a large, resealable Ziplock bag, add the chicken and pour the marinade on top.

Step four:

Seal the bag closely and squeeze gently in your hands until all of the chicken is well coated.

Step five:

Place in the refrigerator to marinade from a minimum of 30 minutes or up to 12 hours.

Step six:

Preheat your grill and place the marinading chicken and cook approximately 8-10 minutes per side, depending on what chicken pieces you are using. Test the chicken with an internal thermometer looking for 165 internal degrees for doneness.

Easy enough? I have to confess that I did add a little more cilantro than the recipe called for. Like I said, we REALLY love it. I also poked the raw chicken pieces with a fork. You don’t need to do that, but I thought maybe it helps to get the flavor into the meat.

You can serve this however you’d like. I chose rice but you can serve it with a potato dish or even sweet potatoes would be good.
