Are you a cake lover? If so, these cake pops are for you. It’s like having a bite sized piece of cake on a stick. Perfect to grab and go. 🙂 A definite hit for parties with kids and heck, adults, too.

I feel like these cake pops have just recently become popular over the past couple of years. Or it’s maybe more of my living under a rock and just now discovering them. Either way, they are the best. Super easy to make and super fun to eat.

I have to admit that this was the first time that I’ve ever made them so please give me some grace in how they turned out. (haha) They may not be the prettiest of cake pops or the perfect photo for a magazine or blog, for that matter, but the taste was amazing!

So, with all of that being said, here’s how I made them. 🙂
Step one:
Prep! Gather and measure all ingredients.

Step two:
Bake the cake box mix the day before you are going to make the cake pops. Once you bake it, let it cool and then crumble the cake mix into pieces.

Step three:
Mix the crumbled cake pieces with the 8 oz of cream cheese icing. Then refrigerate overnight.

Step four:
Remove the cake mixture from the refrigerator when ready to make the cake pops. You want the mixture to be cold so you can form the balls more easily. Take a small scoop of the cake mixture (approximately the size of a golf ball) and roll into a ball. Insert a stick about halfway into the ball and set aside.

Step five:
Melt the chocolate pieces in a microwave safe bowl on high for about 30 seconds. Check and stir and continue to cook, if necessary, until completely melted. Go in 10 second intervals until melted.

Step six:
Dip the cake pops one at a time into the melted chocolate and decorate with sprinkles, sugars, or whatever you’d like. I would strongly suggest that you do this over a cookie sheet or parchment paper because the chocolate will drip. Use a cake pop stand holder or even an empty egg carton with holes punched out to stand the cake pops in.

That’s it! They will harden within a couple of hours. You can wrap some cellophane around them and give them as gifts or simple eat them yourself. Whatever you choose, always make an extra for you. 🙂
Like I mentioned, these are not the prettiest of cake pops, but the taste was SO good. What’s the old saying “don’t judge a book by its cover” (haha). Well, don’t judge these by their looks because my goodness, they were so good and needless to say, did not last long in our house.

Ingredients
- 1 cake, from box mix, prepared
- 1 8 oz cake icing, cream cheese variety is best
- 1 bag melting chocolates, any kind
- Decorations for the pops
Instructions
- Prep! Gather and measure all ingredients.
- 24 hours before you plan to make the cake pops, bake the cake according to the box instructions.
- Once baked, crumble the cake into a bowl.
- Mix in the icing with the crumbled cake until moistened. Keep refrigerated until ready to make the cake pops.
- Using a small scoop or cake pop mold, roll the cake pops into golf ball size pieces.
- Insert a cake pop stick into the ball about halfway through and set aside.
- Melt the chocolates in a microwave safe bowl on high temp stirring every 30 seconds until completely melted.
- Prepare the area where you will assemble the cake pops by placing down some foil or parchment paper or simply a cookie sheet to catch the decorations and dripping melted chocolate.
- Dip the cake pops into the chocolate covering them entirely. Sprinkle with decorations and then place into cake pop stand.
- Allow them to cool completely and enjoy!
